Recipe Of The Week

High-Protein Chocolate Lava Mug Cake
Macros (per serving):

  • Calories: ~320

  • Protein: ~30g

  • Carbs: ~18g

  • Fat: ~12g

  • Fiber: ~6g

I picked up these very old French cups at an antique fair in Sussex while I was prop picking for a restaurant. I knew the moment I saw them I wanted to put something naughty in them and couldn’t wait to get cooking. It’s a dark chocolate mousse topped with milk choc ganache and swirls of salted caramel. They didn’t last long.

Ingredients:

  • 1 scoop (30g) chocolate protein powder (whey or plant-based)

  • 2 tbsp cocoa powder

  • 1 tbsp coconut flour (or almond flour)

  • ½ tsp baking powder

  • 1 whole egg

  • 3 tbsp unsweetened almond milk (or milk of choice)

  • 1 tbsp Greek yogurt (adds moisture + protein)

  • 1 square dark chocolate (85% preferred, ~10g)

  • Optional: pinch of sea salt, drizzle of almond butter on top

Directions:

  1. In a microwave-safe mug, mix protein powder, cocoa powder, coconut flour, and baking powder.

  2. Add egg, almond milk, and Greek yogurt. Stir until smooth. Batter should be thick but pourable—add a splash more milk if needed.

  3. Push the dark chocolate square into the center of the batter (this becomes your lava center).

  4. Microwave for 45–60 seconds. It should rise but still look slightly gooey in the middle.

  5. Top with a drizzle of almond butter or a sprinkle of sea salt if you’re fancy.
